Description
The mutton chest, also known as mutton breast or mutton rib, is a lesser-known but highly flavorful cut of meat that comes from the lower portion of a sheep or goat. This section includes the ribs, some of the brisket area, and a portion of the belly, often with a good amount of fat and connective tissue. Due to its combination of fat, bones, and muscle, the mutton chest is a cut that requires slow cooking to tenderize the meat and develop its full flavor potential. It is particularly popular in South Asian, Middle Eastern, and Mediterranean cuisines.
